BAKED Maple Ginger French Toast

6 eggs

1 cup of whole milk or cream

1/3 cup maple syrup + more for drizzling

1/3 cup Vermont Village ginger sipping vinegar

1 tsp salt

2 tsp cinnamon

1 inch ginger finely chopped (optional)

½ loaf of bread cut into small squares

Yogurt (for topping)


Heat oven to 350° F. In a large bowl beat eggs. Add in milk, maple syrup, sipping vinegar, salt, cinnamon and ginger. Continue whisking until all ingredients are fully incorporated.

Fill an 8′′ round, glass baking dish with cut bread and cover with egg mixture. Add more bread if there seems to be too much liquid.

Lightly drizzle maple syrup over the top. Place in the oven for 45 minutes to an hour. French toast is ready when the top is golden brown and there is no more liquid between the pieces of bread. Remove from oven, let cool for a few minutes and serve warm with maple syrup and yogurt.
